Description
Exceptionally Tender Scotch Beef
There’s a reason beef fillet is considered one of the finest cuts.
Taken from the centre of the fillet, this cut is naturally lean with very little fat and an exceptionally soft, tender texture.
Our Scotch Beef is carefully matured for tenderness and flavour before the fillet is expertly trimmed and prepared by our butchers, leaving you with a beautifully even piece of beef that’s ready to cook.
Roast it whole and carve into thick slices for an impressive sharing meal, or use it as the starting point for a homemade Beef Wellington.
For a special dinner, this is hard to beat.

Cooking Suggestion
For best results, remove the fillet from the fridge approximately 30–60 minutes before cooking.
Season well, then sear the beef in a hot pan to develop a good colour on all sides before transferring to the oven to finish cooking.
As fillet is naturally very lean, take care not to overcook it. It is particularly good served rare to medium, allowing it to remain beautifully tender and succulent.
For greater accuracy, we recommend using a meat thermometer to cook the centre of the beef to your preferred level of doneness.
Once cooked, allow the fillet to rest well before carving into thick slices.
Serving Suggestion
For a classic special-occasion meal, serve thick slices with dauphinoise potatoes, seasonal vegetables and a peppercorn or rich beef sauce.
Or wrap the whole centre cut in mushroom duxelles and pastry to make your own Beef Wellington.
I’d actually link “Beef Wellington” here to your finished Beef Wellington product page – it gives customers the choice of making their own or buying yours already prepared.
