Few cuts make an impression quite like a whole fillet of Scotch Beef.

Fillet is prized for its exceptional tenderness. Naturally lean with very little fat, it has a beautifully soft texture and is particularly suited to roasting whole and carving into generous slices at the table.

Our Scotch Beef is carefully matured for tenderness and flavour before the fillet is expertly trimmed and prepared by our butchers. This removes any unnecessary trim and creates a beautifully presented joint that’s ready for roasting.

At a minimum weight of 3kg, it’s a generous centrepiece that’s ideal when you’re feeding a crowd – whether that’s Christmas dinner, a family celebration or a special occasion.

Cooking Suggestion

For best results, remove the fillet from the fridge approximately 45–60 minutes before cooking.

Season well, then sear the beef in a hot pan to develop a good colour on all sides before transferring to the oven to finish cooking.

As fillet is naturally very lean, take care not to overcook it. It’s particularly good served rare to medium, allowing the beef to remain beautifully tender and succulent.

Because the exact shape and thickness of each fillet can vary, we recommend using a meat thermometer rather than relying solely on cooking time.

Once cooked, allow the fillet to rest well before carving into thick slices.

Serving Suggestion

For a classic special-occasion meal, serve with dauphinoise potatoes, roasted seasonal vegetables and a rich beef or peppercorn sauce.

For a larger gathering, carve the fillet into generous slices and serve at the centre of the table for everyone to share.

Storage & Freezing

Keep refrigerated at 0–5°C and consume by the use-by date shown on the label.

Suitable for home freezing. Freeze on or before the use-by date and defrost thoroughly in the refrigerator.

As this is a large joint, allow plenty of time for it to defrost completely.

Once defrosted, cook within 24 hours and do not refreeze.

Food Safety

This product is raw and should be handled carefully. Wash hands, utensils and surfaces thoroughly after contact with raw meat and keep raw meat separate from cooked and ready-to-eat foods.

As this is a whole cut of beef, it can be served pink in the middle if preferred. Ensure all outside surfaces are thoroughly seared and cooked before serving.
