Sirloin & Fillet in One Steak
The T-bone is one of the great classic steak cuts – and for good reason.
Cut across the short loin, the distinctive T-shaped bone separates two different steaks: tender fillet on one side and rich, full-flavoured sirloin on the other.
The sirloin brings plenty of beef flavour and a natural covering of fat, while the fillet provides that beautifully tender texture. Cooking them together on the bone gives you a steak that’s made for savouring.
Our Scotch Beef is carefully matured for tenderness and flavour before each T-bone is traditionally prepared and cut by our butchers.
Cook it in a heavy pan, on the grill or over the BBQ and give it plenty of time to rest before carving.

As T-bones are traditionally cut from a natural product, the exact shape and proportions of sirloin and fillet will vary slightly from steak to steak. Your steak will always meet or exceed the minimum weight selected.

Cooking Suggestion
For best results, remove your T-bone from the fridge approximately 30–60 minutes before cooking.
Pat dry, lightly oil the steak and season generously with sea salt and freshly ground black pepper.
Cook in a very hot heavy-based pan, under the grill or on the BBQ, turning during cooking to develop a good sear and colour on both sides.
Because T-bone is a thick, bone-in steak, cooking time will vary depending on its thickness and your preferred level of doneness. A meat thermometer is the most reliable way to check the centre.
Once cooked, allow the steak to rest well before serving.
For sharing, carve the sirloin and fillet away from the bone, slice each across the grain and serve everything together on a warm platter.
Serving Suggestion
Keep it classic with chunky chips, onion rings and peppercorn sauce, or serve with roasted vegetables and garlic butter.
For the BBQ, cook it simply with salt and pepper and let the Scotch Beef do the talking.
Storage & Freezing
Keep refrigerated at 0–5°C and consume by the use-by date shown on the label.
Suitable for home freezing. Freeze on or before the use-by date and defrost thoroughly in the refrigerator before cooking.
Once defrosted, cook within 24 hours and do not refreeze.
Food Safety
This product is raw and should be handled carefully. Wash hands, utensils and surfaces thoroughly after contact with raw meat and keep raw meat separate from cooked and ready-to-eat foods.
As this is a whole cut of beef, it can be served pink in the middle if preferred. Ensure all outside surfaces of the steak are thoroughly seared and cooked before serving.
