🛒 What You’ll Need (Serves 4–6)

  • 1 whole chicken (1.5–2kg)
  • 50g butter (softened)
  • Salt & black pepper
  • 1 lemon (optional)
  • 1 onion, halved
  • 2–3 carrots, chopped
  • 500g potatoes (for roasting)
  • Chicken stock (for gravy)

Take the chicken out of the fridge 30–60 minutes before cooking.

This helps it cook evenly and keeps the meat tender.

  1. Preheat oven to 190°C
  2. Pat the chicken dry with kitchen paper
