Our Beef Wellington starts with a generous piece of fresh whole beef fillet, carefully prepared by our butchers before being layered with your choice of filling and wrapped in fresh pastry.
Choose Classic Pâté for a rich, traditional flavour, or Mushroom Duxelles for the classic combination of finely prepared mushrooms, shallot, garlic and butter with tender beef fillet.
Each Wellington is prepared fresh by our butchers and supplied completely raw, including the pastry. That means its first bake happens in your own oven, helping give you beautifully risen, crisp and flaky pastry around the tender beef centre.
We’ve taken care of the preparation – you simply cook, rest, carve and serve.
Perfect for Christmas, New Year, dinner parties and special family occasions, it’s an impressive centrepiece without having to make a Beef Wellington from scratch.

STORAGE
Keep refrigerated between 0°C and 5°C and consume by the use-by date shown on the product label.
Suitable for home freezing. Freeze on or before the use-by date and defrost thoroughly in the refrigerator before cooking.
Once defrosted, keep refrigerated and cook within 24 hours. Do not refreeze once defrosted.
COOKING SUGGESTION
For best results, remove your Beef Wellington from the refrigerator approximately 30 minutes before cooking.
Preheat your oven to 200°C / 180°C fan / Gas 6.
Remove all packaging and place the Wellington on a lined baking tray. For an extra glossy, golden finish, lightly brush the pastry with beaten egg before cooking.
As a general guide:
1kg Beef Wellington: cook for approximately 40–50 minutes
2kg Beef Wellington: cook for approximately 55–70 minutes
Your Wellington is supplied completely raw, including the pastry, so cooking time will vary depending on your oven, the thickness of the Wellington and how you prefer your beef cooked.
For the best result, we recommend using a clean meat thermometer inserted into the centre of the beef to check your preferred level of doneness.
Once cooked, remove from the oven and allow to rest for 10–15 minutes before carving. The pastry should be beautifully golden and crisp, while resting allows the beef juices to settle before slicing.

FOOD SAFETY
This product contains raw beef and should be handled carefully.
Wash hands, utensils and surfaces thoroughly after contact with the raw product and keep it separate from cooked and ready-to-eat foods.
As the centre is a whole cut of beef fillet, it can be served pink if preferred. Ensure the outside surfaces of the beef are thoroughly cooked.
SERVING SUGGESTION
Allow your Wellington to rest before carving into generous slices.
Serve with roast potatoes or creamy mash, seasonal vegetables and rich beef gravy. For an extra-special occasion, dauphinoise potatoes and roasted winter vegetables make excellent accompaniments
