🍴 Quick Recipe

Beer & Onion Relish

A rich, sticky onion relish is the perfect companion to a quality sausage and takes only a few minutes to make.

Ingredients

  • 2 large onions, finely sliced
  • 1 tbsp butter
  • 150ml Scottish ale or your favourite beer
  • 1 tbsp brown sugar
  • 1 tbsp balsamic vinegar
  • Salt and freshly ground black pepper

Method

Gently cook the onions in the butter over a low heat for around 15 minutes until soft and golden.

Stir in the brown sugar before adding the beer and balsamic vinegar.

Allow everything to simmer gently until the liquid has reduced and the onions become rich, sticky and full of flavour.

Serve warm in a fresh morning roll or alongside your favourite Cooper sausage.
