Storage & Defrosting
Keep refrigerated between 0°C and 5°C and consume by the use-by date shown on the product label.
Suitable for home freezing. Freeze on or before the use-by date.
Defrost thoroughly in the refrigerator before cooking. Once defrosted, cook within 24 hours and do not refreeze.
Cooking Advice
Remove the duck from the refrigerator before cooking and preheat your oven to 200°C / Fan 180°C / Gas 6.
Remove all packaging. Pat the skin dry with kitchen paper, season and place the duck breast-side up on a rack in a roasting tin. Prick the skin carefully in several places without piercing deeply into the meat – this helps the fat render during roasting.
As a guide, roast for approximately 20 minutes per 500g plus 20 minutes.
For a 2.6–2.8kg duck, allow approximately 2 hours 5 minutes to 2 hours 15 minutes.
Cooking times are a guide and ovens vary.
Always ensure the duck is thoroughly cooked before serving. Check the thickest part of the bird with a clean food thermometer and ensure it has reached a minimum core temperature of 75°C. The meat should be steaming hot throughout.
Once cooked, remove from the oven, cover loosely with foil and allow to rest for around 15–20 minutes before carving.
Cooper’s Tip: Don’t throw away the rendered duck fat in the roasting tin – it’s brilliant for your Christmas roast potatoes.
