Get that right, and you’ve got one of the best Sunday dinners going.

🛒 What You’ll Need

  • Pork loin joint (with rind)
  • Salt (plenty!)
  • Oil
  • Apple sauce
  • Potatoes & veg

Leave the pork uncovered in the fridge overnight to dry the skin.

This is the difference between average and perfect crackling.

🔥 How to Cook

  1. Preheat oven to 220°C
  2. Pat skin completely dry
  3. Rub oil + plenty of salt into the skin

👉 Cook at 220°C for 25 mins
👉 Then reduce to 180°C
👉 Cook 25 mins per 500g

Resting

Rest for 15–20 minutes before carving.

🍽️ Serve With

  • Roast potatoes
  • Apple sauce
  • Greens & gravy
