High Protein Lemon & Herb Turkey Breast Feast

This week we’re kicking off our new Summer Sundays Done Properly series with a simple Lemon & Herb Turkey Breast Feast that delivers plenty of flavour without feeling heavy.

There is a common misconception that turkey is only for Christmas.

In reality, turkey breast is one of the most versatile meats available. Naturally lean, packed with protein and incredibly easy to cook, it makes the perfect centrepiece for a lighter summer Sunday meal.

Serves 4–6

Ingredients

  • 1 Turkey Breast Joint (approximately 1.5kg)
  • 50g softened butter
  • Zest of 1 lemon
  • Juice of ½ lemon
  • 2 garlic cloves, crushed
  • 1 tbsp fresh parsley, chopped
  • 1 tsp thyme
  • Salt and black pepper

To Serve

  • Baby potatoes
  • Seasonal greens
  • Mixed summer salad
  • Lemon wedges

Method

1. Prepare the Turkey

Remove the turkey from the fridge 30 minutes before cooking.

Mix together:

  • Butter
  • Lemon zest
  • Lemon juice
  • Garlic
  • Parsley
  • Thyme

Rub generously over the turkey joint.

Season well with salt and pepper.

2. Roast

Preheat oven to 180°C.

Place turkey in a roasting tray.

Cook for approximately:

25 minutes per 500g

or until the centre reaches 72°C.

3. Rest

Remove from oven.

Cover loosely with foil.

Rest for 20 minutes before slicing.

This allows the juices to redistribute and keeps the meat beautifully tender.
