Winter Warmer Lentil & Bacon Soup
We all love a winter warmer and bacon! This recipe is our favourite for a homely lentil & bacon soup!
Best served hot with crusty bread and plenty of butter!
Method
Bring the oil to heat in a large pan then add the bacon, onion, garlic and red pepper; season and cook until the vegetables start to soften.
Boil the kettle to make your stock or if you are using fresh stock bring it to boil in a separate pan while you are waiting for the vegetables to soften.
Next add in the sweet potato/white potato and lentils to the bacon and vegetables and stir for a minute.
Then pour the boiling stock into the pan and add the sweet potato, garlic and lentils to the bacon and vegetables. Stir for a minute, then pour over the just-boiled stock.
Return the soup pan to the boil, this shouldn’t take long as the stock is already very hot, and then turn down to a medium heat and cover to cook for around 20 minutes or until the lentils are cooked and tender.
Once the soup is ready it can be blended using a blender or a stick blender or just left as it is, chunky soup is also very tasty and if cooked for long enough it will reduce and become more like a stew, which I do love on a cold winters evening, thick soup and thick slices of crusty bread! Yum!
