Roasted Gammon with Ginger, Cloves & Marmalade
I am letting you into a big family secret recipe here! But this is a recipe you need to try! I have loved this since my mum made it when we were young and every time I go home it is my first request as it always tastes better when mum makes it!

Method
Pop the pan onto the heat and pour the ginger ale into it and allow it to start to boil, then pop in the gammon joint in and top up with water if necessary to cover it and put the lid on the pan and leave on a medium heat to simmer away for at least an 1 hour (20 minutes boil time per lb of weight in the gammon joint but I add extra time because its slow cooked and when its almost falling apart its super tasty!) If the pan starts to boil over then just turn down the heat a bit as ginger ale is very sugary and sticky to clean up if it boils over!
Preheat the oven to 180 degrees Celsius
Take the boiled gammon joint out of the ginger ale pan and pop into a roasting tin.
Mix together in a wee bowl the ginger, cloves, sugar and marmalade in a bowl making sure its well mixed. Then spread this all over the gammon joint and pop in the oven to roast for at least 30 minutes, you want to see the glaze on the gammon look very sticky and gooey then you know its ready.
Take it out of the oven and leave to rest for 15 minutes before cutting, it should be very soft so be careful.
This is delicious served with cauliflower cheese, seasonal vegetables & wedges.
